Recipe for Pierogi (Potato and Cheese Pierogi)
Ingredients:
500g of wheat flour
250ml of hot water
1 tablespoon of butter
A pinch of salt
400g of boiled potatoes
250g of cottage cheese
1 large onion
2 tablespoons of butter
Salt and pepper to taste
Preparation:
Sift the flour, add the butter and salt. Make a well in the flour mixture, then pour in the hot water and knead the dough until it's smooth and elastic.
Cover the finished dough with a warm plate and heat it briefly in the oven or microwave.
In the meantime, prepare the filling. Mash the boiled potatoes into purée using a potato masher. Peel and finely chop the onion. Heat 2 tablespoons of butter in a pan and sauté the onion until golden brown.
Add the cottage cheese and sautéed onion to the mashed potatoes, season the filling with salt and pepper to taste, and mix thoroughly until the ingredients are combined.
Roll out the dough thinly and cut out circles. Place one teaspoon of filling on each circle, fold the dough in half, and seal the edges carefully.
In a large pot, bring salted water to a boil. Drop the pierogi into the boiling water in batches. Cook them for 2-3 minutes from the moment they float to the surface.
Remove the cooked pierogi with a slotted spoon and serve them on plates. You can serve them with sautéed onions, bacon bits, sour cream, or kefir. Enjoy!
