Cabbage Rolls with Meat Filling for a Spring Dinner. Your Family Will Go Crazy for Them

Spring cabbage rolls are not difficult to prepare. Any lover of Polish cuisine can handle this task. The key is to use young cabbage leaves and high-quality minced meat seasoned with spices.

Ingredients for Cabbage Rolls:

  • 1 head of young cabbage
  • 400 g minced pork shoulder
  • 4 cloves of garlic
  • 3 teaspoons marjoram
  • 2 teaspoons sweet paprika
  • 2 bags of white rice
  • 1 teaspoon vinegar
  • 1 teaspoon salt
  • A pinch of pepper

Ingredients for the Sauce:

  • 250 ml cold boiled water
  • 160 g tomato paste (30%)
  • 2 bay leaves
  • A few allspice berries
  • Half a teaspoon of sugar
  • 1 teaspoon all-purpose seasoning

Spring Cabbage Rolls with Young Cabbage. Preparation Method

First, prepare the cabbage. Rinse it thoroughly, then cut out the core, being careful not to damage the leaves. Prepare a large pot. Pour about two liters of water into it. Add half a tablespoon of salt and a teaspoon of vinegar, and bring it to a boil. Once the water is boiling, place the head of young cabbage in it, reduce the heat, and cook the leaves until tender.

Remove the blanched leaves from the boiling water and place them in a bowl to cool. Now it’s time for the filling. In a separate bowl, combine the cooked rice, minced meat, and garlic pressed through a garlic press. Season with salt, pepper, sweet paprika, and marjoram. Mix the ingredients by hand until they form a cohesive mixture.

Place some filling on each leaf, then wrap them tightly into the shape of a cabbage roll. Place the nearly finished rolls in the pot where the cabbage was cooked (first, pour out the water). For the final step, combine the sauce ingredients. In a bowl, mix water, tomato paste, seasoning, and sugar. Pour the sauce over the arranged cabbage rolls. Finally, add the bay leaves and allspice berries. Simmer the rolls under a slightly ajar lid. Once cooked, remove the cabbage rolls onto plates and serve with your favorite sides. Enjoy your meal!
