  • 650 g pickled cucumbers
  • 3 apples
  • 600 ml broth
  • 300 ml coconut milk
  • 180 g rice
  • 200 ml pickle juice
  • 1 tablespoon butter
  • 1 tablespoon honey
  • 1 teaspoon turmeric
  • Salt and pepper

Cucumber Soup with Apple: Preparation Method

Peel the apples and cucumbers, then grate them on a fine grater. In a pan, melt the butter and sauté the apples. When they begin to brown slightly, add the grated cucumbers. Sauté everything for a few minutes. Meanwhile, cook the rice in salted boiling water, then season it with turmeric and pepper.

Transfer the apple and cucumber mixture to a large container. Pour in the broth and blend it into a smooth cream, then transfer it back to the pot. Bring it to a boil over medium heat.
