This is a cuisine that continues to surprise and fill our stomachs to the brim.

Today, we want to share a recipe for a dish that stands out from the rest. These are potato halyszki, which, with their simplicity and flavor, encourage you to make them. Halyszki are grated potatoes mixed with egg and flour, then dropped into salted boiling water to cook. They can be served with various toppings, but we recommend bacon, cracklings, and bryndza (a type of sheep cheese).

Recipe for Highlander Potato Halyszki

Ingredients for Halyszki:

  • 1 kg of potatoes
  • 4 tablespoons of wheat flour
  • 1 egg
  • 1 flat teaspoon of salt
  • Additional Ingredients:
  • 150 g of raw bacon
  • 100 g of bryndza
  • A piece of lard
  • Salt for cooking
  • Pepper for seasoning

Preparation:

  1. Peel, rinse, and grate the potatoes using a large grater. Place them on a clean cloth or cheesecloth and squeeze out the excess water. However, remember to save the water in a bowl so that the starch can settle at the bottom.
  2. Transfer the grated potatoes to a bowl, add the egg, flour, and salt. Also, add the starch that has settled at the bottom of the bowl. Mix all the ingredients thoroughly until combined.
  3. Bring a pot of salted water to a boil. Scoop the potato mixture with a spoon and drop it into the boiling water. Cook for about 6-7 minutes, then drain and place in a bowl.
  4. Meanwhile, prepare the topping. Dice the bacon and lard. Place the ingredients in a pan and fry until crispy.
  5. Place the hot dumplings on a plate, sprinkle with the fried bacon, bryndza, and pepper. Serve hot, enjoy!
