Farszynki is a traditional Masurian dish consisting of a meat and egg filling. It's most commonly made using meat from broth. It tastes great when served with red borscht or alongside groats and a salad.

This delicacy is truly worth the effort to prepare. Its flavor is unique, and you've likely never tasted anything quite like it before. It's an ideal alternative to the classic meat patties or pork chops that we know so well.
Peel the potatoes and cook them until soft in salted water. Once cooked, drain and set aside for about 15 minutes to cool. Then, press them through a potato ricer and leave them in a cool place.
Now, prepare the filling. Finely chop the onion. Heat some oil in a pan and sauté the onion over low heat.
When the onion becomes golden, add the cooked meat, cut into smaller pieces. Season with salt and pepper and mix well.
Cut the hard-boiled eggs into smaller pieces and place them in a bowl. Add the sautéed onion and meat to the same bowl. Mix everything together until combined.
Add salt and pepper to the previously prepared cooked potatoes. Add the sifted wheat flour and potato starch, as well as the egg. Mix everything together until the ingredients are well combined.
Transfer the dough onto a floured board and knead until smooth and pliable. Then, cut the dough into thicker slices. Flatten each slice with your hand into a flat patty. The next step is to place the filling on the dough. Gently fold and seal the edges of the patty. Shape the dough with your hands into an oval shape.
Sprinkle each patty with flour and fry on both sides in lightly heated oil until golden brown. Serve the fried farszynki with your favorite side dishes. Enjoy!
