I Grind Meat from the Broth and Potatoes from Yesterday's Dinner. Even Grandma Would Be Proud of These Pyzy

Craving some Polish cuisine? Use this clever trick to repurpose leftovers from yesterday's dinner. You can make delicious homemade pyzy using meat from the broth and potatoes left over from Sunday's meal. It's a tasty, zero-waste dish.

Potato dumplings filled with a meaty stuffing are one of those dishes that, although simple, are loved by almost everyone. There’s a lot of flexibility here, as you can stuff the dumplings with pork, chicken, or beef. Add some crispy bacon bits on top, and serve a meal that could rival the best taverns. Ingredients:

  • 1 kg of cooked potatoes
  • 1.5 cups of wheat flour
  • 2 tablespoons of potato starch
  • 1 egg
  • A pinch of salt
  • Ingredients for the meat filling:
  • 500 g of meat from the broth
  • 200 g of bacon
  • 1 kaiser roll
  • 1 cup of milk
  • 4 large white onions
  • 1 clove of garlic
  • Salt and pepper to taste
  • Rapeseed oil for frying

Prepare pyzy so good that even the flies won't land on them. Use leftover potatoes and meat from dinner

Before you start preparing the delicious pyzy, soak the roll in milk (or water) a few hours in advance. You’ll need it soft and soaked for the recipe.

  1. Separate the meat from the bones and grind it in a meat grinder.
  2. Cut the bacon into small cubes and fry it in a pan. Once done, remove the crispy bits onto a plate.
  3. Peel the onions, dice them, and fry them in the fat rendered from the bacon. Add half of the onions to the meat filling and the other half to the reserved bacon.
  4. Add the soaked roll, after squeezing out the excess milk or water, to the ground meat. Add the garlic, pressed through a garlic press, and season with salt and pepper to taste.
  5. Press the cooked potatoes through a potato ricer. Add wheat flour, potato starch, egg, and salt to the potato puree. Knead the mixture into a uniform dough.
  6. Divide the dough into equal, smaller portions. Flatten each portion gently in your hand, fill it with the meat mixture, and form it into a ball. Place the raw pyzy on a floured board or countertop.
  7. Cook the pyzy in batches in lightly salted water. To ensure they are well-cooked, wait 5 minutes after they float to the surface.
  8. The finished pyzy taste best when served with bacon and onions. You can also drizzle them with some of the bacon fat. This zero-waste meal will surely satisfy the whole family. Even grandma would be proud of such homemade pyzy. Enjoy!
