The snack in question is potato croquettes stuffed with yellow cheese. The cooked potatoes are seasoned with aromatic spices, then grated yellow cheese is placed on top of a potato pancake. This is shaped into a croquette, coated in breadcrumbs, fried, and it's ready!
Recipe for Potato Croquettes Stuffed with Yellow Cheese
Peel the potatoes, rinse them, and place them in a pot with salted water. Cook until soft, then drain and mash them with a potato masher.
Add the egg, sifted wheat flour, and breadcrumbs to the prepared potatoes. Season everything with salt, pepper, and potato seasoning. Mix thoroughly until fully combined.
Grate the yellow cheese using a large-hole grater directly into a large bowl.
Form thin, larger patties from the potato mixture. Place some grated cheese in the center of each one and seal them to form neat croquettes. Coat the prepared croquettes in breadcrumbs.
Heat oil in a pan. When it's hot enough, place the croquettes in the pan and fry them on each side until golden brown. Then place them on a plate lined with paper towels. Serve as a side dish or a standalone snack.
