The Secret to Crispy Edges: Here’s the Key to Perfect Pancakes For the pancake batter to be ideal for frying, it should be placed in the refrigerator for at least half an hour. It’s best to leave it there overnight if time allows. The batter’s consistency should resemble thick cream. Crispy edges will form when frying pancakes for a longer time on the first side over medium heat. Before flipping them, wait until the edges become crispy and golden.

Sift the flour into a bowl. Crack in the eggs, add the sugar and salt. Then pour in the milk and sparkling water.
Mix the batter slowly with a mixer on low speed. The batter should have the consistency of thick cream. After mixing thoroughly, place the batter in the refrigerator for about half an hour.
In the meantime, prepare the pan by spreading a small amount of clarified butter on it.
Take the batter out of the refrigerator and fry the pancakes on both sides. Use a ladle to pour the batter onto the pan. Fry the pancakes until they are golden brown.
Place the fried pancakes on a plate. They taste best right after frying, but they can also be eaten cold.
