We're talking, of course, about mushrooms, and as we all know, mushrooms go perfectly with onions. This combination is ideal and will make you forget about boring scrambled eggs and sandwiches for a long time.

Mushroom omelette - a recipe you'll love
Ingredients:
4 small eggs;
approx. 250g of fresh, well-cleaned wild mushrooms;
1 shallot onion;
butter;
2-3 tablespoons of sweet cream;
chopped parsley;
a small sprig of fresh thyme;
salt and pepper to taste.
Mushroom omelette - preparation method:
Thoroughly clean the mushrooms, especially chanterelles, preferably with a small brush. Then, cut them into smaller pieces.
Heat a generous spoonful of butter in a pan and add the chopped onion. Sauté until translucent, then add the mushrooms. Fry until they soften and lightly brown.
While the mushrooms are frying, prepare the egg mixture. Crack the eggs into a bowl, add a little cream, salt and pepper to taste, and the sprig of thyme (torn into pieces). Whisk until smooth or beat with a fork. Then, add the chopped parsley and mix again.
Pour the egg mixture over the mushrooms in the pan and lower the heat. Shake the pan gently and cook under a lid until the omelette sets on top.
