Instructions:

  1. Start preparing the dessert by separating the eggs. Beat the egg whites with a mixer until stiff peaks form. Gradually add the sugar and mix until fully combined.
  2. Once the mixture is ready, begin adding the egg yolks one at a time, mixing thoroughly to create a smooth batter. Sift in the flour and baking powder, and mix again until well combined.
  3. Finally, pour in the sparkling water, but be sure to control the amount so the batter doesn’t become too thin. If it does, add a bit more flour.
  4. Divide the smooth batter into two equal parts. Add the sifted cocoa powder to one part and mix thoroughly to avoid lumps.
  5. Line a baking tin with parchment paper. Then, alternate pouring the two batters into the tin. You can gently swirl the batters with a toothpick at the end to create new patterns.
  6. Place the prepared cake in a preheated oven at 180°C and bake for about an hour. To ensure the cake is done, you can perform the "dry toothpick" test. After baking, remove the cake from the oven and let it cool. You can also drizzle it with chocolate glaze if you like.
